Recipe: Corn O'Brien

Veganized

CORN O’BRIEN

Serves 6 to 8

¾ C bell pepper, shredded
3 Tbsp butter (or vegan-approved substitute)
3 ½ C Cut Cooked Corn (see recipe in this section)
3 Tbsp pimento, chopped
½ tsp salt
1/8 tsp pepper

Cook bell pepper in butter for 5 minutes, add corn, pimento, salt, and pepper, and cook 10 minutes longer, stirring lightly with a fork. Serve at once.
