Recipe: Oven Meal of Beef Patties, Broccoli, Sweet Potatoes, and Peach Crunch

Oven meals are dishes that bake for the same length of time at the same temperature. Prepare everything. Pop it in the oven. Pour a glass of your favorite adult beverage. Put a nice record on the phonograph. Sit in front of the fire and share events of the day with your family.
(Peach crunch isn't pictured because we had leftover dessert.)

OVEN MEAL OF BEEF PATTIES, BROCCOLI, SWEET POTATOES, AND PEACH CRUNCH
Serves 4 

Preheat oven to 375°. Prepare all dishes and bake together 40 minutes. 

BEEF AND APPLE PATTIES 

½ lb ground beef 
1 lb ground pork OR veal 
1 egg 
½ tsp salt 
Apple, cut into 6 thin slices, ¼ inch thick 

Combine meat, eggs, and salt. Shape into 12 thin patties. Place an apple slice between two patties and seal edges. Place patties in a single layer in shallow baking dish. Bake uncovered. 

SWEET POTATOES WITH HONEY 

2 ½ canned sweet potatoes, drained and cut lengthwise into ¼ inch slices 
¼ C honey 
¼ C orange juice 
¼ tsp salt 

Arrange sweet potato slices in greased casserole. Mix together honey, orange juice, and salt, and pour over potatoes. Baked covered. 

Broccoli and Peach Crunch below.

 

BUTTERED BROCCOLI 

1 lb frozen broccoli spears 
1 tsp salt 
4 Tbsp butter 

Place broccoli spears in a casserole. Sprinkle with salt and dot with butter. Baked covered. 

PEACH FLAKE CRUNCH 

3 ½ C canned sliced peaches, drained, ¼ C juice reserved 
1/3 C orange juice 
1/3 C brown sugar 
3 Tbsp butter, softened 
1 C flaked cereal (Corn Flakes, Wheaties, whatever) 
½ C flour 
1/8 tsp nutmeg 
1 tsp grated orange rind 
Sweetened whipped cream (for serving) 

Arrange peach slices in bottom of a greased casserole. Pour peach juice and half of orange juice over peaches. Blend together brown sugar and 2 Tbsp butter, then add cereal, flour, nutmeg, and orange rind, mixing well until mixture is crumbly. Spread mixture evenly over peaches. Sprinkle with remaining orange juice and dot with remaining 1 Tbsp butter. Bake uncovered. Serve warm with whipped cream, if desired.
