Yummy Baked Potato Skins

Something fun! On occasion-- say, when there's a game or movie we want to watch-- Mr. Big Food will whip up some "bar food" instead of an honest-to-goodness supper. Why not? 'Tis the season.

YUMMY BAKED POTATO SKINS

Makes 8

4 large baking potatoes, baked

3 Tbsp vegetable oil

1 Tbsp shredded Parmesan cheese

½ tsp salt

¼ tsp garlic powder

¼ tsp paprika

1/8 tsp pepper

8 slices bacon, cooked and crumbed

2 C (8 oz) shredded yellow cheese

½ C sour cream

4 green onions, sliced



Cut baked potatoes in half lengthwise and scoop out pulp (save for another use), leaving ¼ inch shells. Place shells on a greased baking sheet. Combine oil, Parmesan cheese, salt, garlic powder, paprika and pepper and brush all over potato skins. Bake at 475° for about 8 minutes. Turn shells over and bake for another 8 minutes or so. Turn right side up. Sprinkle bacon and cheddar evenly inside of skins, and bake 2 minutes longer or until cheese is melted. Top baked skins with sour cream and green onions.

  1. Sounds yummy - but I usually eat the skins off my baked potato! What are you doing with the potato you scoop out?

    We ate out this last week - something pretty unusual, but we were celebrating a couple of birthdays. They offered the usual bread for munchies while dinner cooked, and also potato peels! The peels were a bit thinner than I'd expect from your usual hand peeler, but maybe they use something more modern and mechanized?? anyway, they were very thin, as opposed to thick, and also very thin as opposed to wide. It tasted to me like they'd been deep fried very briefly, and salted.

    They were pretty darn good - especially considering they were just potato peels!

    Actually, I think some of it goes back in. The remainder get cooked up in some butter the morning after! Scramble and egg or two-- throw them on top. If you want to be fancy you can add a chopped onion.

    I like the sound of potato peels. Sounds good!
