Recipe: Swiss Steak

What a day! 

Here's the recipe for last night's Swiss Steak. We/he-- whoever-- did it in a cast iron skillet and baked it.
 
SWISS STEAK

1 ½ lbs cube steak, pounded
Flour
Bacon fat or shortening (for browning steaks)
2 C diced stewed tomatoes (substitute Ro*tel for some of the tomatoes for a spicy dish)
2 onions, sliced
Water (to cover dish before baking)
Bay leaf
Salt, pepper, to taste

Rub flour, salt, and pepper into sides of steaks. Saute steaks in fat until browned. Stir in onions and pour tomatoes over all. Add water to cover. Add bay leaf and additional salt and pepper (to taste) and cook,simmering uncovered on stove top or in 350o oven, about 1 hour or until steak is tender and sauce is thickened and reduced.
