Recipe: Zucchini Bread II

I don't have a photo of this zucchini bread. It is the perfect zucchini bread to have with a glass of iced coffee after you've come in from picking the zucchini.


ZUCCHINI BREAD II

3 C zucchini, grated
3 eggs
1 C oil
2 C honey or brown sugar
3 C flour, heaping if using honey
½ C nuts, chopped
3 tsp vanilla
3 tsp ground cinnamon
¾ tsp ground nutmeg
1 tsp salt
1 tsp baking soda
1 tsp baking powder

Preheat oven to 325o. Beat eggs until foamy, add oil, honey or brown sugar, and vanilla. Sift together flour, cinnamon, nutmeg, salt, baking soda, and baking powder, add liquid mixture to dry ingredients, fold in zucchini and nuts. “Bake as muffins or loaf or tube cake.” Bake 1 hour.
