Recipe: Okra Casserole I

Eat your veggies!
OKRA CREOLE I

Serves 4

1 C okra, sliced, boiled in a small amount of salted water for 10 minutes, drained
1 medium onion, chopped
1 bell pepper, chopped
2 Tbsp salad oil
3 fresh tomatoes, quartered OR 1 C canned tomatoes
1 tsp sugar
1 tsp flour
½ tsp salt
½ tsp pepper
Dash Tabasco (or more, to taste)

Brown onion and pepper in oil, add tomatoes, and cook 5 minutes. Add drained okra, sugar, flour, salt, pepper, and Tabasco, and cook 5 minutes longer.
