Recipe: Garden Potato Salad

No photo. Sorry. It's potato salad.


GARDEN POTATO SALAD

Serves 6

3 C cold cubed cooked potatoes
½ tsp salt
¾ C chopped celery
½ C cubed cucumber
½ Tbsp chopped onion (or more, to taste)
1 Tbsp chopped parsley, plus more for garnish
12 radishes sliced
Mayonnaise
Lettuce leaves (for serving)
Radish roses, quartered hard-cooked eggs (for garnish)

Combine potatoes, salt, celery, cucumber, onion, 1 Tbsp parsley, and radishes in order given, and add enough mayonnaise to moisten (about 1 C). Chill. Serve salad in nests of lettuce leaves. Garnish with radish roses, parsley, and quartered hard-cooked eggs.
