Recipe: Holiday Brunch Casserole

Made with Homemade Hot Sage Sausage which is not the same as Homemade Sausage with Sage.

Mr. Big Food put this together late in the afternoon on Wednesday. It was ready on the 4th.

HOLIDAY BRUNCH CASSEROLE



Serves 6



1 lb sausage, cooked, crumbled, drained (preferably homemade—see recipes in Meats, Tex-Czech, and Tex-Mex sections)

4 ½ C day-old bread, cubed

2 C (8 oz) shredded sharp cheddar cheese

10 eggs, beaten slightly

4 C whole milk

1 tsp dry mustard

1 tsp salt

¼ tsp onion powder

Freshly ground black pepper, to taste

½ C mushrooms, chopped coarse or sliced

½ C tomatoes, peeled, chopped (optional)



Place bread cubes in a well-buttered 9x13 inch baking dish and sprinkle with cheese. Combine eggs, milk, mustard, salt, onion powder, and pepper, and pour mixture evenly over bread and cheese. Sprinkle sausage, mushrooms, and tomatoes (if using) over top, cover dish, and chill overnight. Next day, preheat oven to 325o. Bake uncovered for 1 hour 15 minutes to 1 hour 30 minutes, or until completely done in center. Tent with foil if top begins to brown too quickly.
