Recipe: Best Breakfast Casserole and Party Variation

Really, really good!

This is the regular version, not the party variation. It would make an excellent breakfast for the coming busy weekend. Make it in the evening, refrigerate overnight.

"Scrumptious. Be creative with the bread and meat you use."

BEST BREAKFAST CASSEROLE AND PARTY VARIATION

12 slices bread (“may substitute French bread for white bread: either preferably homemade—see recipes in Baked Goods section)
1 lb Velveeta cheese
8 oz sausage, cooked and drained (preferably homemade—see recipes in Meats section)
1 stick butter or margarine, melted
6 eggs, beaten
1 tsp dry mustard
½ tsp salt
1 quart milk

Break bread into small pieces and place in a greased 9 x 9 inch baking dish. Cube cheese and place over bread, then top cheese with sausage. Pour melted butter over all. Stir together beaten eggs, mustard, salt, and milk, then pour mixture over casserole. Cover and refrigerate at least 6 hours. Preheat oven to 350° and bake casserole for 1 hour or longer, until a crust forms on the top and the casserole is firm.

PARTY VARIATION
“Layer over bread 1 (10 ounce) box frozen chopped broccoli, cooked and drained. Add the cheese and diced ham. Add 2 tablespoons instant minced onions to the beaten egg mixture, pour over casserole. Proceed as directed. Serves 10.”

Recipe: Breakfast Enchilladas

We had these for supper the other night, but they'd make a great breakfast!
How easy is this? Mr. Big Food assembled this dish before he left for work and pulled it out of the fridge when he arrived back home. Supper's ready!

¾ lb cooked hot pork sausage, drained
½ C green onions, sliced fine, white and pale green parts only
10 8 inch flour tortillas
8 oz shredded cheese (any variety for Mexican cooking)
6 large eggs
2 C half and half

¼ tsp cayenne pepper

Recipe: Cream Pancakes

Unbelievable!

CREAM PANCAKES

Makes about 10 pancakes

2 large eggs
1 tsp salt
1 Tbsp sugar
1 C cold water
½ C cream
¾ C flour
Melted butter (for rolling and serving pancakes)
Maple syrup (for serving pancakes)

Beat eggs until thick and lemon colored, then beat in salt and sugar. Add water, cream, and flour alternately to egg mixture, beating after each addition. Let stand 30 minutes, then beat again before making pancakes. (The longer this batter stands and the more it is beaten, the better and lighter these pancakes will be.) Fry by spoonfuls on hot greased griddle. Butter as soon as cooked and roll up. Serve with additional melted butter and maple syrup.

Recipe: Buttermilk Pancakes

They match the table!
Mr. Big Food used up the last of our buttermilk and made a batch and a half this morning. We feasted and then froze the rest, because you can never have too many homemade buttermilk pancakes in your freezer.

BUTTERMILK PANCAKES

Makes about 1 dozen

2 cups self-rising flour
1 tsp baking powder
1 tsp salt
2 eggs
2 Tbsp butter melted
2 cups buttermilk

Sift together flour, baking powder, and salt. Add eggs and buttermilk. Add cooled melted butter last. Bake on hot griddle.
