GARLIC GREEN BEANS
1 lb green beans, (can use frozen, thawed and drained)
2 Tbsp olive oil
¼ C white onion, chopped fine
2 cloves garlic, minced
½ C fully cooked sausage or ham, cubed
1 Tbsp red wine vinegar
2 tsp sugar
1 tsp salt
¼ tsp white pepper
Heat oil in a heavy skillet. Add onion, garlic, and ham or
sausage and sauté until vegetables are soft. Stir in vinegar, sugar, and
seasonings. Heat thoroughly. Stir in beans. Cover and simmer over medium-low
heat 15-20 minutes,
