SPICY CALIFORNIA
CHICKEN BARBECUE
Serves 8
1 C tomato juice (use spicy V-8 for a spicier dish)
¼ C vinegar
2 Tbsp brown sugar
1 Tbsp corn starch
1 Tbsp onion, chopped very fine
1 Tbsp oil
1 tsp salt
1 tsp dry mustard
1 clove garlic, minced
¼ tsp cayenne pepper
1 chicken or beef bouillon cube
2 chickens, cut into quarters
Combine all ingredients except chicken in a small saucepan,
bring to a boil, reduce heat, and simmer about 3 minutes or until mixture
thickens, stirring constantly. Grill chicken over hot coals for 40 minutes or
so, turning every 5 minutes or so and taking care not to burn. Baste with sauce
during the last 10-15 minutes of grilling.
