Recipe: Barbequed Pork Chops II

Easy clenaup

BARBECUED PORK CHOPS II

Serves 6

½ C water
¼ C vinegar
2 Tbsp sugar
1 Tbsp prepared mustard (preferably homemade—see recipes in Basics section)
1 ½ tsp salt
½ tsp pepper
¼ tsp cayenne
1 slice lemon
1 medium onion, sliced
½ C catsup or chili sauce (preferably homemade—see recipes in Basics section)
2 Tbsp Worcestershire sauce
1 to 2 tsp liquid smoke
6 rib pork chops, ½ inch thick

Mix together water, vinegar, sugar, mustard, salt, pepper, and cayenne, add lemon and onion, and simmer 20 minutes. Preheat oven to 350o. Add catsup or chili sauce, Worcestershire sauce, and liquid smoke to mixture in saucepan, and bring to a boil. Place chops in an 11 ½ x7 ½ x1 ½ inch baking dish (lined with foil for easier clean-up, if desired), pour sauce over chops, and bake uncovered for 1 hour 25 minutes, turning chops once.
