Recipe: Perfect Potato Salad

PERFECT POTATO SALAD

Serves 4-6

2 ½ C peeled, sliced, and cooked potatoes
1 tsp sugar
1 tsp vinegar
½ C sweet onion, chopped
1 ½ tsp salt (or less, to taste)
1 ½ tsp celery seed
¾ C mayonnaise (preferably homemade—see recipes in Basics section)
2 hard-cooked eggs, sliced or chunked
Cherry tomatoes, halved (for garnish, optional)

Sprinkle cooked potato slices with sugar and vinegar, toss gently to blend, and let stand a few minutes. Blend in gently the onion, salt, celery seed, and mayonnaise. Fold in sliced eggs and chill at least 1 hour. Before serving garnish salad with cherry tomato halves (if using).
