Recipe: Chocolate Chocolate Chip/Chunk Muffins | UPDATED for Vegans

From Miss M. She used chocolate chunks rather than chips.

This is veganizable and just as soon an Miss M. let's me know how to do that, I'll share.

UPDATE: Substitute soy milk (or another non dairy alternative) for milk and 2 Tbs cornstarch plus 1 Tbs water for the egg.

CHOCOLATE CHOCOLATE CHIP MUFFINS

1 3/4 C flour
2 tsp baking powder
1/2 tsp baking soda
2 Tbsp cocoa
1 large egg
3/4 C semi-sweet chocolate chips
1 C milk
1/3 C oil plus 2 tsp
3/4 C sugar
1 tsp vanilla

Mix all ingredients well. Fill muffin tins 3/4 full and bake at 400° for 20 minutes.
