Recipe: Sausage Popover Pancake

Use cheap pie plates
What a treat! Missy behaved quite well in the kitchen, as we knew she was able.

Mr. Big Food used homemade Italian sausage, which we made a week ago.

Use 4 aluminum pie plates (cheap ones). You can re-use them for other stuff.



SAUSAGE POPOVER PANCAKES



Serve 4



1 lb bulk sage pork sausage (preferably homemade—see recipes in this subsection)

8 tsp butter

8 eggs

1 1/3 C flour

1 1/3 C milk

1 tsp dried thyme

1 C (4 oz) shredded cheese (mild cheddar is good for these, but use your imagination)



Pre-heat oven to 400o. Fry sausage until cooked through, crumbling meat as it cooks. Drain meat. Place 2 tsp butter in 4 pie plates (7-8 inch). To make batter, beat eggs 30-60 seconds. Gradually add flour, beating well to remove any lumps. Add milk, beating slightly to combine. Melt butter in pie plates in oven. Divide sausage evenly into plates. Pour an even amount of batter into each plate. Sprinkle each evenly with thyme and cheese. Bake for 20 minutes or until popover pancakes are puffed and browned.
