Recipe: chicken à la Lousiane

Is there vegan fake chicken?

CHICKEN LA LOUISIANE

1 chicken, boiled until tender and cooled, broth retained for Sauce
Hot fat
Sauce for Chicken La Louisiane

Disjoint the chicken, drain, and fry in hot fat until golden brown. Serve with Sauce for Chicken La Louisiane.

SAUCE FOR CHICKEN LA LOUISIANE

2 Tbsp butter or shortening
1 Tbsp flour
6 ripe olives, pitted
12 mushrooms, chopped
4 artichoke hearts, chopped
1 pint chicken broth (from boiling chicken)
Salt, cayenne pepper, to taste
Sherry

Melt butter, remove from flame, add flour, and stir until smooth. Add chicken broth, return to flame, and cook, stirring, to a creamy thickness. Add remaining ingredints and cook a few minutes more.
