Recipe: Fried Cabbage (vegan & non-vegan)


FRIED CABBAGE

Serves 6

¼ lb salt pork, cut into strips
1 medium cabbage, chopped
Salt, pepper, to taste
¼ C water

Fry salt pork until crisp, then remove from pan. Combine cabbage, salt, pepper, and water in drippings, and simmer, covered, for 10 minutes, or until cabbage is tender and begins to brown slightly, stirring occasionally. Crumble salt pork over cabbage.

To veganize, omit meat and use olive oil rather than drippings.
