Recipe: Green Bean Puff

Ha ha. He said, "Puff."




GREEN BEAN PUFF

Serves 4

4 C cooked green beans, drained
¼ C celery, diced fine
¾ C mayonnaise (preferably homemade—see recipes in Basics section)
1 tsp mustard (preferably homemade—see recipes in Basics section)
¼ tsp salt
1 tsp vinegar
¼ C milk
1 egg white, beaten stiff
¼ tsp paprika

Preheat oven to 400o. Combine hot beans and celery in a 5 C casserole. Blend together mayonnaise, mustard, salt, vinegar, and milk, fold in egg white, and pile mixture lightly on top of beans. Sprinkle with paprika. Bake 15-20 minutes, or until sauce puffs and browns and beans are thoroughly heated through.
