1 quart (4 C) cooked grits
1 egg, beaten well
1 C milk
Cooked bacon or sausage, cut up or crumbled (optional, and the latter preferably homemade—see recipes in Meats, Tex-Czech, and Tex-Mex sections)
Preheat oven to 400o. Beat together all ingredients, pour into a lightly greased pudding pan, and bake 40 minutes.
