Recipe: Bourbon Sweet Potatoes

Mr. Big Food made some modifications to this recipe as he was preparing the dish. The original recipe called for something like three cups of sugar-- for 4-5 sweet potatoes which, as the name implies, are already sweet! We also omitted the topping entirely.

The recipe below includes the topping, but has been corrected-- do use one cup of sugar in the sweet potatoes. Although, if you're topping them, you could cut that back a bit.

BOURBON SWEET POTATOES WITH TOPPING

Serves 4 to 6

4-5 sweet potatoes, peeled, cooked, and mashed, cooled
1 C sugar
3 eggs
1 stick butter, melted
Small can evaporated milk
1 tsp vanilla
1 oz (1/8 C) bourbon

Preheat oven to 350o. Combine all ingredients and pour mixture into a well-greased casserole.

TOPPING

1 C chopped pecans
1 C brown sugar
1 C flour
1 stick butter, softened to room temperature

Mix together all ingredients well and sprinkle over potato mixture in casserole. Bake 40 minutes.
